This. At least for a baking tray. It’s all to do with evenness of heat transfer for baking.

Roasting - we just use regular steel roasting tins.

I've got one of these:



The non stickiness of the Scoville range is outstanding for the price. I've had the roasting pan for about 7 years, used a few times a week, and it still looks like new. So easy to clean.
