My wife has asked me to cook this evenign as she's working until half 7. She has left me with nothing but 2 chicken breasts in the fridge.

So in a kind of Ready-Steady-Cook way of thinking, what can I do with them? I have the following to hand (as far as I can remember):

2 Chicken breasts
Fresh chives
Fresh parsley
Fresh mint
Fresh runner beans
Tin of tomatoes
Tins of soup
Oven chips
Sainsburys
Asda
Aldi

I'll have a couple of hours to prepare but will have to go out for 30 mins or so to collect her from work - it'd be nice if I could do something that could be mostly done before I leave to get her and just required a bit of finishing while she gets changed after work.

Open to suggestions, must use the two chicken breasts and must not be "spicy".

Answers below before 4:45 this afternoon, please.

ketchup/coke bbq chicken and chips.

Granted you dont list ketchup and coke in your ingredients but I'm sure you've got ketchup and a bottle of coke isnt hard to find.

Quick & simple:

2 x Chicken breast
4 x rasher back bacon
1 x small tub cream cheese
chives

  • Cut off streaky end of bacon. Chop into small pieces
  • Chop chives
  • Mix bacon offcuts & chives into cheese
  • Peel back chicken skin (if present) and make a long slit lengthwise into the chicken breasts, about 2/3 depth of the breast. At base of slit then cut sideways both sides to create a cavity.
  • Line chicken cavity with 1 bacon each
  • Stuff cavity with cheese mix
  • Top with 1 each bacon and (if present) stretch chicken skin back into place over the top.
  • Bang 'em in the oven for 1/2 hour & cook veg of your choice.
Quick, easy and surprisingly tasty.

Stuffed with portabello muchrooms
Piece of Gouda or Emmentale on top
Wrapped in Parma Ham

Roast

Serve with Asparagus, Runner Beans, New Potatoes

Sauce ... Cheat ... Pepper sauce

Before you go to collect her, slice the breasts, and put them in a bowl with chopped garlic and sliced onions and peppers. Pour over the juice of a lime mixed with some oil, a teaspoon of mild chilli and some chopped coriander.

Fetch Wife.

Get a frying pan/wok fairly hot, chuck the bowl of chicken etc in and stir it occasionally (but not so occasionally that it burnswink). Dish up on a warm plate, with some tortillas, soured cream, guacamole (if you like that shit) and salsa.

Thats not allowed hehe

Its not a special occasion or anything but I was looking for a change to the normal thing of "roast in the oven with random herbs and some butter on the top" served with new potatoes and veg.

The BBC Food website lets you type in three ingredients that you have and will suggest possibilities ... with varying levels of success ... (eg chicken and chives and tomatoes => Lasagne of Morston Lobster)
