as promised in my help bulletproof cake recipe request here are the results:
ingredients
melted chocolates and beaten egg whites
folding in egg whites
raw cake in tin
out of tin to cool
It's a little thinne rthan I thought, but I guess as it's a no flour cake it's to be expected, hope it tastes good...will find out tomorrow I guess.

A recipe from the mother-in-law, a cherry/coconut/choc slice. Have just eaten my second slice now...it's very moor-ish. While there was some melted chocolate around, I dipped a couple of strawberrys in for one of my "five a day"
Also, made some strawberry fairy cakes for the kids. I chopped some strawberrys up and put them in the cake batter, then pureed some for the icing but added a bit too much red food coluring.

Spotted mince pies for sale in a supermarket yesterday; sent my taste buds tingling so thought I'd make the first batch of the year.
However, given that there were no expectant hordes, I decided to do some experimentation.
So, on a base recipe for an almond pastry, I did two batches, one with butter the other with Cookeen*. Then also tried some with an egg wash before baking and some without etc.
Varying success; glad I played 'test lab' in October rather than two days beore Christmas!
My poor work colleagues will have to put up with the outputs tomorrow
*Other traditional vegetable oil based baking fats are available

Recipient was someone that my mates wife works with. My mate and me started making cakes for family and friends kids birthdays and thought we could try selling them to others to make a bit of cash to get more baking equipment. Have sold a few now, but its still mostly a hobby.
Don't have a photo of the cake cut open, as I wasn't at the party the cake was for, but its 3 layers of plain sponge with jam and vanilla buttercream between each layer.

Jeez, thats some attention to detail... Must have been a LOT of time and effort went in to that - I hope you were rewarded hansomely! My mrs still does the occasional character cake (for the kids birthdays and returning customers from when she used to sell them).
