Despite this looking like a 'that's all that was in the fridge' breakfast, I think I might like to try Avocados & Poached Eggs. Is this a 'genuine' dish? And honestly, is it worth trying?

I have my own hens so lots of fresh eggs, and half a dozen Avocados currently ripening.

I've since researched it. And yes it appears to be a 'power food'. All the ingredients are eaten here lots (boiled eggs & Avocados in salads), just not in the above combination, until now...

Sundays effort. Quite small to usual efforts but made a nice change.

Black pudding, tomato, curly sausage, bacon strips all on top of a mushroom.

Took some inspiration from an earlier post and baked 2 eggs in the avocado with little cheese, herbs and seasoning.





Was delicious

Is it literally just a case of dropping the egg in the hole of the stone?

get a large avocado
slice in half and remove stone.
scoop out some more room to allow 1 egg to be placed in area, or if not enough room, then just enough to place yoke there.
garnish with grated cheese, herb, etc.

place in oven and grill for 10-12 mins.

with extra egg white and scooped out avocado make some scrambled eggs, have as a side dish if you are used a small avocado.

A pukka toasted sandwich no such problem, but I then burn my fecking mouth on the molten cheese/tomato/whatever.
