This morning's offering.
If I make Scrambled Egg it's this way. Mostly I'll poach mine, literally a few minutes after their laid. Last night I had two fresh Duck Eggs poached and over some Smoked Salmon. It was, awesome.

I will never buy supermarket eggs again.

Why coconut oil?
Coconut Oil

Coconut oil is made from the fat found in the meat of coconut. Contrarily to most vegetable oils, coconut oil is rich in saturated fats. However, you should not worry about the saturated fats in coconut oil, because they are not associated with high blood cholesterol levels or heart diseases, as explained by Mary G. Enig, nutritionist and author of "Know Your Fats." The types of saturated fats found in coconut oil, called medium-chain triglycerides or MCTs, are similar to some fats found in breast milk. MCTs can contribute to a healthier body weight and a decreased risk of infection.

I just put beaten eggs in a bowl and microwave. After two mins or so, the egg will have started to set around the edges, I break it up with a fork and stir it, then back in for another 30 secs, and repeat until the eggs are not quite fully set. By the time you put them on the plate, they are perfect, slightly creamy scrambled egg with nothing but egg as an ingredient.
Microwave scrambled eggs is the only method I have used for years.

I'd baulk at 2 mins though unless you are cooking a lot of eggs at one time, I tend to do single portions so 2/3 eggs and 40/50 seconds to start then 10 second blasts between stirring, take out before fully set as they continue cooking in their own residual heat.

Creamy.

Yes that's good if you like them in smaller pieces but I enjoy them in loose larger chunks more akin to Japanese omelettes.

The Japanese even strain the whisked egg before adding to their pans. It's an art over there.

Mesmerising. I almost fell asleep watching that on repeat, it's great. Out tomorrow to buy a square pan!

Since I've moved out into a flat by myself, a weekly fry up has started to become a tradition. I burnt the sourdough toast slightly though boxedin

I've had a stomach bug since last Wednesday and have barely eaten in that time. This morning I woke up and felt hungry so made this smile My stomach has obviously shrunk because I really struggled to get through it all.

What's the flat, pancake-like thing just above the bacon?

You mean the thing that's about the size of a slice of bread without crusts on and a sort of fried colour? tongue out

Yep fried slice in the middle of a breakfast sandwich has been a standard for me for ages, unless toast used for outer sandwich layers
