Out and about Saturday morning collecting some mini parts for my van.

Happened to pass a Burger King and thought I'd try out their breakfast items.



Not had one before and was really nice... On a par with the golden arches for sure.

Until you try one.... honestly!

I was skeptical at first but the sausage had much more flavour to it and the egg was great.

Those mini hashbrown bites where like crack I'm telling you! could have gone back for another couple of bags... Cheaper than crack too I might add. wink

Thanks - it was a bit of a "make it up as I go along" effort and it turned out ok though I did over cook the egg.

1. Boil 1/2" of water in a wide pan and blanch spinach for a minute.
2. Take spinach out, run under cold tap, drain and squeeze out the bulk of the moisture and set aside.
3. Empty pan, dry it out, melt some butter and sweat off some mushrooms in the butter for about 5 minutes
4. Chop the spinach and add that to the pan
5. Add flakes of smoked mackerel
6. Pour in some double cream, crack of black pepper, salt and nutmeg
7. Stir it for a couple of minutes until its all mixed together. Will look something like this (this is enough for two):



8. Spoon the mixture in to a ramekin, flatten then make a divot in the middle
9. Crack an egg in to the divot (the yoke should stay centred, the white will flow over the top of everything
10. Bake in a preheated oven at 200c for about 10-15 mins (I'm going to try lower temp/longer cooking next time to try and keep the yoke runny)
11. About a minute before the end, sprinkle some grated cheddar over the top and pop them back in the oven
12. Serve with a crack of black pepper. WARNING - the inside is nuclear hot when it comes out of the oven!

I had this recently. It's one you forget just how tasty it yes, yet so easy & simple.

Having a camp stove brekkie Monday morning. I'm sure I've forgotten something...?

I can confirm that the hashbrown bites are indeed like crack! Had them regularly for breakfast when I was in Thailand.
