I like my local butcher's "old time" sausages. lick



Best mail order ones I've found are from Supreme Sausages (www.supremesausages.co.uk). They do some delicious flavour combos particularlythe venison ones.

Thankyou. I've had a bit of practice at the rosti and for me the secret is to get the mixture as dry as possible which means getting all the starch out of the spud and the moisture out of the onion as much as you can. I grate the spud into a colander and rinse it under the cold tap until the water runs clear, grate the onion in to it, then tip it all into a clean tea towel, twist it up and squeeze the heck out of it until you can't get any more liquid out. Then its just a case of a good glug of oil and not scorching hot so it cooks with a nice colour.

If you've got a potato ricer, you can chuck the grated potato in there and squeeze all the water out smile

Yes just potato onion, salt and ground black pepper. Rough ratio that seems to work is 4 large spuds to one small to medium onion, makes 3-4 depending on your ring size and thickness preference (matron).
