Global Knife - Sharpening?

I know this has been asked on here before, but everyone seemed to be a fair bit more experienced than me when it comes to the art of sharpening.

I have Global Knives. I like them a lot. I have gradually added to my collection over the past 12 months or so.

The ones i got last year are starting to be slightly less impressive than when i first got them. I am not a delicate person, and think i could easily mess them up if i tried using steels or whetstones etc.

My old man used to have a knife sharpener that you just slid them through. He had crap knives though, and i can't see how accurate they would be.

What is my best option? My knives are treated better than most children and i don't want to mess them up.

I use diamond sharpeners, you cant really mess up sharpening a knife, have a look at some youtube videos for advice.

Ohh and if you want a properly sharp knife you need a leather strop too (I use an old leather belt)

My Mora survival knife is sharp enough for me to shave with.

I got one of these for christmas and it's cheap, simple, easy to use and sharpens Globals perfectly in seconds.

I've got one that looks very much like this, and it does a great job with my global knives. Works with normal knives as well, but they tend to need re-sharpening sooner!

What he said. This will sharpen up any old knife, if you've cheaper ones hanging around.

The ceramic Global 'steel' is also apparently good, if a bit more tricky to use, and will shatter into 1,000,000 pieces if dropped.

I get my global knives sharpened in London once a year with London sharpening Service,
Very easy..I book online in the website and they come to my home,in less than 20 minutes job done,no mess,very easy..I believe many professional chefs use this service too..

Ive got a 1000/6000 wetstone to sharpen my knives. Takes a bit of practice but makes for a really sharp knife.

DMT diamond stone does the job and lasts years.

It's what you see most butchers use before they set about cutting meat. A few strokes done frequently keeps them sharp.

These work well but be aware that some of ultra cheap ones aren't made of particularly good quality metal which create plenty of filings & not last very long (obiously a few years in a home use but no good at all for industrial/regular use)

I work in catering/butchers supplies trade and the guys still prepare meat on site and we supply a large range of knives for butchers. As a result there are a good selection of sharpeners we use/sell from similar to that £3 ebay item ( You can usually find Vogue branded diamond steels on ebay for £10-20and they work well) through to higher quality diamond steels from Granton Steel and Global which are £50 & £150, to electric machines.

I'd say that the most significant factor is actually technique.

But hey, its a pretty common request and we've had everything from ebay steels to $300 "systems".

Don't knock my Wicked Edge nono, but then I didn't pay $300 as I bought it second hand.

Looks like basically half a Wicked Edge - should I now contribute to the frivolous purchases thread seeing as I already have a Wicked Edge but am just about to press the button on this one???
