just make sure it's warmed through (don't over nuke it as it'll be awful) and it'll be fine
despite eating cold rice cakes since I was born I've never ever been ill from it and most prawns you buy will already be cooked (that's why they're pink)
I hear lots about it on here but has anyone ever been ill from the rice fungus??

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.
Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

That re-heated rice thing is overkill. So long as the rice is refrigerated as soon as it's cooled down it can keep for a couple of days and safely re-heated. Indeed I wouldn't have my egg fried rice any other way! Tastes much better with day old rice leftovers.

Cook the rice with a proper rice-cooker, leave the rice in fridge overnight, then the next day fry it with eggs.
Proper Chinese way!
