Had some Paella last night, is it ok to re heat?

I don't think that either rice or shellfish take very well to re-heating. Rice contains a fungus (or summat) that flourishes when re-heated and consequently is the uk's number 1 source of food poisoning.

Should be ok if you nuke it to within an inch of it's life though.

just make sure it's warmed through (don't over nuke it as it'll be awful) and it'll be fine

despite eating cold rice cakes since I was born I've never ever been ill from it and most prawns you buy will already be cooked (that's why they're pink)

I hear lots about it on here but has anyone ever been ill from the rice fungus??

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's steaming hot all the way through, and avoid reheating more than once.

Me, think it was due to eating reheated rice frownhurl it's the only time I've been ill from food.

That re-heated rice thing is overkill. So long as the rice is refrigerated as soon as it's cooled down it can keep for a couple of days and safely re-heated. Indeed I wouldn't have my egg fried rice any other way! Tastes much better with day old rice leftovers.

It's if you leave the rice in the pot for the next day that can give you an upset tummy even if you do reheat it. The fungus may be killed but the toxins already produced won't be.

As for prawns - they usually come cooked anyway and no problem re-heating them.

Just think of all those supermarket microwave curry and rice meals, or frozen paella, etc. They are just pre-cooked food ready for reheating. What magic do they use? Refrigeration/Freezing is what.

The FSA Bacillus advice forgets to mention one thing. Bacillus is susceptible to pH. Use the leftover rice to form nigri blocks (mix rice with vinegar first). Split prawns, lay on top of nigiri block and hey presto, nigiri ebi!

I just remember from my Saturday job training in a Little Chef in the 90's that left over rice was one of the top causes of food poisoning...

I'm also a bit nervous about prawns, after a couple of dodgy episodes. I'd stay clear, but that's just me.

Cook the rice with a proper rice-cooker, leave the rice in fridge overnight, then the next day fry it with eggs.

Proper Chinese way!
