Just stuck a tin full in the oven - The missus and I love the stuff. Warm with tons of butter on is devine.

Will post up the results in about an hour smile

Straight out of the oven...



...and after ten minutes, on to the rack to rest and cool down.



Wish you could add smells to a post smile

250g plain flour

1 teaspoon bicarbonate of soda

pinch salt

115g butter

115g dark brown soft sugar

2 eggs, beaten

500g mashed over-ripe bananas


1. Preheat the oven to 180 C / Gas mark 4. Lightly grease a 23x13cm loaf tin.
2. In a large bowl, combine flour, bicarbonate of soda and salt.
3. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour mxture into prepared loaf tin.
4. Bake in preheated oven for 60 to 65 minutes, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack.

Sometimes add walnuts as well.

Yes, looks very good! Have just made one myself!!!

Think it was a bit dirty pulling an old bunch of bananas out of the kitchen bin, but they were kind of protected in their skins haha

Will post photo's in about 1 hours time with the results!

This recipe is so good I had to make another batch. I doubled all the quantities (as I had about 10 speckled bananas to use up!) and it made three nice loaves. Nice crust, and lovely moist interior. Mmmmmm....

Calibrax, that looks great. I guess the only criticism I have with the recipe I followed is that it could do with a bit more banana (like yours).
