Mushy food ideas

I've had a few friends over the years who've been put on a liquid/very soft food diet for months on end - either due to teeth/jaw problems or cancer issues...and it gets boring very quickly if they're just limited to soups and milk puddings through a straw.
One of them had severe stomach cancer and his wife cooked everything as normal and then pureed each item separately in a blender ( I think she said she had about 5 of them) so he could swallow it.
My mother is in a similar situation with the added complication of being diabetic and in a hospice. She is being given a soft cauliflower cheese dinner and for pudding a diabetic strawberry mousse which she enjoys.
I just wondered if any of you had various interesting ideas for mushy food?

It may be a bit too spicy though!!

Yes, not too spicy...I understand that chemo makes the anus red raw, so a few extra spices won't be that welcome.

Or how about a slow cooked Corned beef hash?
Does the food have to be a smooth consistancy, or can it have mince and finely diced onions etc?

This would be useful to know.
Sadly the lack of spices already mentioned, may be a bit of a problem.
I was thinking about a stew, casserole, beef in red wine/Guinness type of dish. Either cooked until the meat is tender enough to chew, or blend it?
Blending will spoil the look of the dish but not the taste, if we are going to blend the we can include roast dinners, this may involve extra blenders (as stated earlier) and probably extra gravy, to make it easier to swallow.

A risotto might be nice.

Simple risotto rice and a chicken stock cube. Cut the chicken very small (or just use a supermarket already cooked one) add a few very finely grated veggies, such as parsnips, carrots, butternut squash. A little salt and sprikle in some saffron dust.

home made pate is very nice too. Simplest thing. Tin of bortolli beans, tin of green lentils and aduki beans. Simmer for one hour in stock cube, drain, cool and blend. Simple, tasty and very nutritous

Edit:

cous-cous is another very simple dish that is easy to make.

Tescos and the like sell frozen oven roasted veggies. Defrost in the microwave and cut up very small. Add to a batch of cous cous that's slightly wetter than normal and it's a simple tasty meal

potato salad can also be another one

Boil potatoes and instaed of mashing them, GRATE into a bowl. Add finely diced meats and a little mayo, salt pepper and lime juice and some finely chopped cooked veggies It tastes pretty good

Looks good Cotty, but I think abit more mash and perhaps some bread and butter smile

It had loads of mash, that was only the first portion.

Bread isn't very mushy, unless you soak it in something. Bread and butter pudding with custard, now your talking.

It looks good Cotty, but there is approx a 20% hint of peas and even more than that of a fish slurry...the mash wasn't shouting out to me.
It's probably cultural differences,but plenty of mash, creamed potatoes, bread and butter is the norm a little bit ( but not all the way) up north smile

My nan used to make a great fish pie, god rest her soul. But I wasn't old enough when she passed to appreciate it and get her recepie frown
