Black Pepper Masala
Discussion
I'm not normally a huge fan of pre-made Indian sauces (with the exception of Patak's curry pastes), but I saw Sharwood's Black Pepper Masala for sale in my local Tesco and thought I'd give it a go.
After making my own curry base (onion, garlic, ginger) I added the sauce to some cubed lamb shoulder, a can of coconut milk and some chicken stock. I then reduced it for an hour on the hob in a non-stick wok.
I was very surprised and impressed with the result, a totally different flavour. I'm on the hunt for a scratch recipe to try and replicate the flavour - anyone else tried this?
