If you think unscroupulous restaurant owners don't do it occasionally, think again.
Be weary of opened bottles of wine. A bottle should ALWAYS be opened in front of the customer.

Depends where I am eating but if I don't know them I will order ahead if it is a decent wine. Some places (very few, 5*+) will have bottles ready and others just decant and re-bottle.
