Just made some from a James Martin recipe (he doesn't call it French Onion).

Really simple:

Saute 5 onions and some garlic till very well coloured
add 300ml of red wine and some beef stock
simmer
add 100ml of balsamic vinegar and 50ml of brandy and season with s&p
simmer a bit moren
serve with chopped parsley and cheesey-toasty things

It's pretty good but next time I think i'll use less balsamic...


What's the difference between this and french onion then?

nothing, French is just added to make it sound 'exotic'. Unless you actually use French onions it should really only be called French style anyway!

100ml of Balsamic does sound a lot!
