Why if you leave a sealed bag of frozen food do you end up with more ice appearing ??

If its closed and sealed I don't understand how more ice can form the longer its left in the freezer ?

I think it's due to the moisture from the item you're freezing escaping from said item and then freezing itself. Possibly. Or something.

Thats exactly it, plus moisture in the air within the bag. Hence vac-pacs which eliminate the air and greatly slow the drying process of the food, ie. freeze-dried food.

You see this on meats, especially the fats which "burn" in the freezer if left unsealed or for a very long time.
