Last nights quick pre mountain biking dinner - lamb kebabs in a Moroccan marinade, and left over sausage.

Before


After (and a new plate was used for anyone who is going to kick off about raw meat etc.) With a bit of cous cous.

Smoked some chicken wings today (dry rubbed with jerk seasoning the night before). Oh my god, they are gooooooooood! really smoky flavour from the hickory, and sooooo tender!

Lovely weather...


Smoking temperature nicely stabilised...


Ribs getting close, 4 hours in the Weber so far, another half hour to go...


Inquisitive pigeon wondering what all the lovely aromas are...

Lunchtime barbecued and smoked snags. They came from a farm shop and god were they good

Right chaps, inspiration please.

We've got people over for a BBQ on Friday. Now, unfortunately I only have a gas BBQ these days, so I'm short of inspiration for what to do. Will ribs work on a gas BBQ?

I'm definitely going to make up a batch of sausages to put on, but otherwise I'm running a little short of ideas...

Any help gratefully received thumbup

Get down to Lidl and buy some Bratwurst. They work brilliantly on a BBQ.

Roasted Veg salad with herbs, oil and lemon dressing?

Lightly smoked salmon skewers?

If he is making his own burgers, maybe cut a small piece af brie and fold it into the middle of the burger before cooking, supposed to melt inside so no need for external cheese.

Indeed I have read the thread, but I'm on gas rather than charcoal, and a lot of what's on here is smoked or cooked indirectly.

Will the ribs work on a gas BBQ?

'Only' a gas barbie? You can do indirect cooking more easily on a gas barbie assuming you have at least two burners.

Agreed! smile

Although I am a bit anti gas, it is certainly (generally) easier to cook on!

As long as you are pished at the end of cooking, everyone will blame the drink anyway!

We are having a few people round on Saturday for a bbq (charcoal of course) so Im going to make some kebabs and marinate some meats, will post up pictures of the results.

I wouldnt mind smoking some ribs, is it just a case of getting some hickory wood, using that instead of charcoal and closing the lid for a good few hours?

No matey. You use charcoal briquettes as well as hickory wood chips. The way I do it to get a constant flow of smoke is to soak the wood chips for at least half an hour. Then fashion a bowl out of some tinfoil and put the drained wood chips in this. Once the briquettes are up to temp, pop the wood chip bowl directly onto the coals then wait until they start smoking slightly. At this point the ribs go in and the lid is placed on.

You can simply sprinkle the soaked chips directly onto the coals but I find that they burn out too quickly this way.

Ah I see, might give it a try on Sunday depending on how rough I am from Saturday.
Any reccomendations of where to buy them from? Not online I mean, easier to get some while Im out getting meat.
