I do tend to pre cook some chicken cuts in preparation, I find it gets there quicker when many need feeding.

What you need is decent temperature control on your grill so you can cook the food through before the outside burnt to a cinder. With coals that's just waiting until you have an even heat. With a gas grill? Piece of piss. Turn it down from full on!

Sometimes I despair...

Survived a mini down pour just now thanks to the weber lid - on the bone feast tonight..



beef ribs, pork ribs, wings and corn.

Never posted in the BBQ section before but i thought i'd play too...

Smoked in a Weber Smokey Mountain this weekend.

4.5KG Brisket - Smoked for 14 hours..



Pork Ribs - Smoked for 8 Hours

They were fantastic - so good I forgot to take a photo once smoked.

Anyone used a cabinet smoker such as the BBQ Guru Onyx or Backwoods Chubby? (Great name!).

They appear to be very highly regarded in the States, and the design should be reasonably easy to build in blockwork to make a built in smoker...

Mmmm! I haven't got round to making those this year.

Yesterday I did a beer can chicken and homegrown chillies, stuffed with cream cheese and wrapped in bacon, but forgot to take any photos.

I haven't had as many as last year, but it is good to set something on a long cook whilst working in the garden as I can keep an eye on it.

Finally caved in and bought a smoker. Went for a ProQ Frontier.

First cook of pulled pork planned for the weekend. Anyone got any rubs/injections/methods they are willing to share?

Forgot to take a before pic but this lump of pig has been on all night. Dry rub of fennel seeds, salt, pepper indirect heat on lowest setting. I'll pull the skin off and put it in the oven to crisp up.





I'll leave it till about 3pm...there's no science or method here, pure guess work!

Fingers crossed.

Won a Facebook competition with World of Power who are a Weber stockist.
I'd like to say I did something to earn it but embarrassingly it was just a like and share type thing.
