Whatever you do, don't see a Komodo Kamado in the flesh - I saw one nearly ten years ago and it still haunts me. So damn perfect...

Whatever you do, don't see a Komodo Kamado in the flesh - I saw one nearly ten years ago and it still haunts me. So damn perfect...
They look brilliant but of course at USD6k for the giant one have a price tag to match.
Do you think Saffire and Monolith are manufactured under one umbrella then? They do look very similar.

Even better in the flesh. Was before I became interested in proper bbq, but still wanted one. Over 50kg of stainless steel just in the grills/basket...
Saffire/Monolith look identical. Key bit being the woodchip feeder. Looking at the price list the UK distributor sent me a while ago, an XL with all the accessories you'd want, minus table, worked out at £1400. I think he's hit the volumes to enable a price drop since then however.
It's on my shortlist, along with the Primo Oval. BGE just seems overpriced in comparison.

If you're in the vicinity the showroom for Creative Outdoor Living is worth a look. The sprung hinge and stainless steel on the Diamond XL is a thing of beauty. It's so substantial on the whole that the price tag seems reasonable.

Well my first foray into smoking ribs didn't go well
Cooked them indirectly at around 250f for 3.5 hours , looked great on the outside but very tough and barely edible.
The only thing I can think I did wrong was put them on too early as the temp was around 350-400 for about an hour until I could get it down to 250ish
Any ideas?

Probably too hot and too quick.
Lower the temp to about 200f for 3 hours and then wrap in foil with a splash of apple juice or bbq sauce for a couple of hours.
Then pull a bit of meat and try it.
If they're not ready, back in the foil. You can always finish them off with a bit of a char over the hot coals when they are ready.
With bbq, you need to get it cooked way before you are ready to serve it because meat & fire can be a bit finicky sometimes and it's ready when it's ready.
If the meat is cooked and you're not ready to serve it, wrap it in foil, then an old towel and keep it in an insulated cooler.
