just walked past a stand in S'oton where a young lass had cupcakes made in just about every conceivable colour and shaped topping, they were going like... erm... hot cakes?

There's a bakery on the high street in Cowes, all the cakes are you common stuff, chelsea buns, belgian buns, french fancies, macaroons, etc. But...they are mahoosive!! Double the normal mean size.

Try that!

Also, check out the cakes at Soothills in Fareham, the muffins are covered in white icing with smarties, each muffin has 7 or 8 of one colour smartie, looks great! Always buy one for Mrs H when I go to our bank.

Can you make choux pastry? I love those big choux buns with coffee icing and cream in the middle.

Yup choux is one of me things - big mountains of profiteroles especially. Hmm profiteroles.

Thanks for all the good ideas, there are rose shaped pink meringues in the oven at the moment.

A mate of mine is going through exactly the same thing at the moment. She's going to be getting into farmers markets and suchlike so I'll point her in the direction of this thread too.

Have you also considered local sandwich shops and deli's as outlets for your cakes? I spoke to the one I get my sarnies from yesterday and she was very keen, looks like they're going to do a deal too.

Not quite husband, but he's err...cuddlier than when I started. hehe

Rocky road cupcakes are being baked later on and will be coated in fudge pieces, marshmallow and chocolate chips.

Got a few cafe/bar places to chat to, and have just had a huuuge corporate order for a big event. Should keep me busy for a few days.

I'd never heard of it until I moved to Bedwyn, but got completely addicted, now we're in Yorkshire we get relatives and friends to bring us 'aid' parcels of it when they come to see us.

What about Mochaccino cheesecake?

(Choc digestive base / rich sweet pastry base (take your choice), white chocolate and coffee cheesecake mixtures, half and half swirled, topped with whipped cream and decorated with some sprinkles or cocoa powder)

Well I better make one for the next market!

Postal cakes are something I'd really like to get in to - and oddly enough I was talking to a packaging company today about just that.

There is so much cake and so little time to make it all in.

Next week I'm making Rocky Road, and coffee cake slab, plus the usual cupcakes.

The meringues sandwiched with cream and berry coulis were especially pleasing.
