Why not try a Swedish dish. This may not be spelt correctly but it's something like Pytt y Panna.
It's a dirty leftovers fry up with eggs. Mmm.
Take cool boiled potato and cut into small cubes. Finely chop an onion. Cube up any leftover meat or you could use ham or whatever you like.
Put a couple of tablespoons of oil in a frying pan.
Fry the onion until softening then add the other (cooked) ingredients and fry until nicely coloured and browning. Take the pan off the hear and crack in a couple of eggs. Cover with a lid and leave for a few minutes.
The egg white should cook from the heat of the food but the yolk should be soft. Serve onto a plate without breaking the yolks.
Cut down through the soft egg yolk so the delicious yellow goodness coats some of the cubed potato, onion and meat and fork some into your mouth. MMMMMMMMMMM.
I love this with plenty of salt and black pepper and an ale. First eaten in Sweden: oft repeated back home.
