Thinking of taking the plunge into cooking chemistry..

I run a lab so things like liquid Nitrogen, water baths, glassware etc are easy to come by....

So, what have you been served, what have you seen in books/TV and what recipes can you make up?! I have The Big Fat Duck cookbook to give some handy hints but most of Hestons stuff is waaaay too complicated/time consuming/has ingredients that are banned here hehe

The best (most practical suggestions) will be on the menu for a dinner party with pics posted on the 'Dinner' thread.

I would imagine that one of the easier (!) ones might be something like ice cream made with liquid nitrogen. AFAIK that speed of freezing does not allow ice crystals to form thereby making it very smooth.

I'd be keen to try any of his very long, slow 'sous vide' recipes, like 24 hour poached lamb. Just don't have the accuracy or temperature control in a domestic kitchen, but your lab may be so equipped!
