We have a great little chinese stall in our indoor market that sells good sized bags of spices for 50p so i'd definitely agree with old smacker there.

Actually I might have got my measurements a bit out. I read the instructions as teaspoons as opposed to tablespoons. Which to be honest as I was only cooking for me and I didn't need a huge batch of the spice mix worked out well. So I ended up with the correct percentages but just less overall mix.

I used two heaped teaspons in the meal as opposed to one tablespoon but it was spicy enough and I really like it

As above I didn't use much as I reduced the quanities of each ingredient. If I start to use more spices then I will take your tip on board and get myself down to my local Asian Supermarket.

Bang on, as long as the ratios are the same then it won't matter.

In which case, get yourself a copy of Kenny's Cajun & Creole Cookbook. (Undeservedly) long out of print, second-hand copies pop up on Amazon every now and then.

Its more a case of its very difficult to buy just enough engredients for one meal. It worked out cheaper to buy 180g of chorizo than go to the deli counter and buy 100g. The kabanos I could only buy 6 small sausages rather than the amount needed for just one meal.

Sainsburys were doing BOGOF on chicken thighs and drumsticks £3.00 each (£1.50 per meal) so I had it two days on the trot. I still had lots of chorizo and kabanos left over so had it twice this weekend hence the Mk4

The chicken thighs & drumsticks average 3 thighs and 4 drumsticks per pack. As I used 3 thighs and 1 drumstick per meal I now have 6 drumsticks to use in something.

Yup. yes

When I make a curry I usually make enough for 3-4 meals and freeze the others.

The spice blend makes a great rub for roasted chicken thighs. Mmmm... Nom, nom, nom.

Made shrimp and chicken creole on Friday night, using an old recipe I got from my time in New Orleans.

Fry chopped onion or shallots.
Add in half tin of chopped tomatoes.
Add in 3 cloves of chopped garlic.
Generous splash of chilli sauce to your taste.
Add a tablespoon of caster sugar.
2 teaspoons of cayenne pepper, bit of salt and pepper.
Stir well, turn down to low heat just above a simmer.
Add chopped chicken breast. Stir in.
Add in half a chopped sweet red pepper.
Add in chopped celery if you like that sort of thing.

Leave for 10 mins on low heat.

Stir, add in the rest of the chopped sweet pepper. Add a packet of washed and peeled prawns.

Serve with good rice when it's all cooked through.

Easy! But gets brownie points.

I have a New Orleans cookbook and crayfish fat is listed as an ingredient for quite a lot of recipes. I would love to try the real stuff rather than my own makeshift/substite stuff.
