An unexpected Wiltshire Chilli Farm stall at the Leeds Christmas Market with a couple of specials I haven't tried. The samples swayed me, great tasting, decent heat.

Criollo:

Fatalii

I'm somewhat addicted to fatalii chilli, if you haven't tried them and like a lemony hit try and have a go.

Still my favourite for heat and flavour, the hotter sauces he does just turn me inside out, the original is best.

I love the Ribman sauces! I first got into them going to football, when he used to serve rib rolls with HF out the back of the Boleyn Tavern before West Ham games. I've been a regular for years now pre-match. I love HF but I think the sweet spot for me is Christ on a Bike smile

Obviously not a chilli sauce as such but I have become seriously addicted to Chili Chrisp. I'm putting it on everything.

Heat, texture, MSG, oil to carry the flavour. Anyone who likes spice, get to the Chinese supermarket

This stuff absolutely slaps. I ran out and tried the Lee Kum Kee version as a replacement, no where near as good. Too oily, too spicy to really enjoy,. Night and day.

This stuff I could eat from the jar.

A hot sauce with ants in anyone?

https://lapimenterie.com/en/produit/formica-fortis...

I can't seem to find it in stock anywhere anyway but I'd be willing to give it a go, I presume they add zero taste, some small grainy crunch and heaps of novelty value (plus a price uplift).

The other La Pimenterie sauces I've tried have all been excellent (but quite mild) so I suspect this one is a nice tasting one too based on the ingredients list but presumably a somewhat limited edition.

Sauce of the year?
For me...Grandmas Hot Sauce. I am only posting this as I've run out and it reminded me how nice it was).
Using the wiri wiri pepper (never heard it either).

https://www.grandmashotsauce.co.uk/

Small bottles so need to contact them for a decent haul.

Ingredients list looks good and I don't think I've ever had a Wiri Wiri pepper.

I picked this one up today, loads of flavours that come in stages and just the right amount of heat.

(Skip to 10:30 for this one but it's a decent episode if you have the time to watch it all)

What Is Lao Gan Ma Chili Sauce?

Lao Gan Ma, or “old godmother” is a brand of chili sauce. In 1997, founder Tao Huabi started her business in Guizhou, China. She’s the very same lady pictured on the label!

She was born into a poor family in a remote mountain village and did not fully learn to read or write. Widowed a few years after marrying her husband and having two kids, she opened a noodle shop to support her family.

She soon became well-known for the special chili sauce she served with her noodles, set up her own sauce factory, and became a self-made billionaire with an international sauce empire! The company produces 1.3 million bottles a day. Heinz produces 1.8 million bottles of tomato

Counting, clearly not a problem.

Those super hot chutnies/pickles are so good. I tried the Mr Naga pickle after seeing it recommended on here…really tasty alternative to sauces.

Always seems to me stuff like this is always the hottest, whereas anything called "Death by Chili", "fking Mega Lava Hot Killer Sauce" or similar or with the skull and crossbones or a coffin on the label, is usually a big let down.

A bit like any firm that has "Solutions" in their title. Avoid like the plague. They won't provide any, but will leave you looking for them to put right their fk up.

I got this for Xmas

High expectations.... But it was just a slightly more refined Encona.

I'm not a fan of Encona, so it's not my favourite.
No fear as my wife will have small amounts.

Great bottle and label, conents not as good.
5/10

250g of chillis with the top chopped off
Chop roughly and store them in a home made brine in an air tight container for a week

Take 2 red sweet peppers and chop
4 garlic cloves
1/2 teaspoon paprika
1/4 cup coriander chopped
1/8 cup basil chopped
1/4 cup oil
Juice of a lemon

Drain the chillis and blitz everything together adding the oil as you go to get to the consistency you want and that’s it done. If it’s too hot at more lemon

Variations… used smoked paprika for a smoky taste
Replace half the oil with coconut milk to get more of a peri peri sauce
