Every time I go up the Hunter Valley, I have to endure the Smelly Cheese Shop so Vanessa can get some cheese. Started off as wine for me and Cheese for SWMBO but now wine and cheese for Vanessa and $16 box wine for me ! To be honest im not a great fan of cheese, but that changes once its cooked.

My entry is... Ciabatta Bread Pizza.
Ingredients... Olive ciabatta (contains olive pieces), olive oil, chopped tomatoes with garlic, mozzarella, emmenthal, chorizo sausage, mushrooms, Italian herbs, and anchovies.
Cut ciabatta in half along its length, then toast the crusty side under the grill. Remove, turn over and drizzle olive oil over the bread. Add chopped tomatoes and garlic, with the Italian herbs mixed in. Sprinkle a layer of finely grated emmenthal, then add the mozzarella in small chunks, then add more emmenthal. Add slices of chorizo, mushrooms and anchovies.
Then pop it under the grill until the cheese has melted and the edges of the bread start to brown. Result... lovely crispy, yet light, Ciabatta Bread Pizza.
