I don't like these 'best' things as they're entirely subjective and mood dependent. However, if you can class it as Rap I will go for:

Eric B + Rakim - Follow the Leader.

Has to be Mos Def's "Mathematics" for me.

http://www.youtube.com/watch?v=m5vw4ajnWGA

I love Snoop Dogg too, he has had some great tunes and I love his lazy, laconic style, but Mos Def just has so much energy and the music behind his rapping is always top notch.

Can't pick one song but the most influencial album for me would be '3 Feet High and Rising' by 'De La Soul'.

Here are a few gems:

Mellow Hip Hop:
Pete Rock @ C L Smooth: They Reminisce over you
DJ Krush @ C L Smooth: Only the strong survive
Guru: Lifesaver
Ice Cube: It was a good day
Mos Def: Sunshine
Digable Planets: Rebirth of Slick
Roots Manuva: Witness
Roots Manuva: Dreamy Days
Justin Warfield: K Sera sera
The Pharcyde: Passing me by

Hip Hop:
The What: Method Man & Notorius B.I.G

Tell the devil ha: KRS-One
Nas: The message
Wu Tang Clan: Bells of war
Run DMC: Walk this way
Guru & MC Solaar: La Bien La Mal

The Message by Grandmaster Flash & The Furious 5

It took hip hop and rapping to another level. Without that song there'd be no gangsta/political/conscious rap; no PE, NWA, KRS-One, Ice-T
Absolutely!!

Still sounds amazing today http://www.youtube.com/watch?v=O4o8TeqKhgY&fea...

Never thought id see MF Doom mentioned in a PH Thread, nice one!

No one song, but Vinnie Paz gets my vote, (along with some Ill Bill, Jedi Mind Tricks etc.)
For a more relaxed approach Abdominal is a fantastic lyricist.
