Ooh far too much to list and I could recommend some amazing stuff, but most of it you will probably never be able to find (vinyl only or deleted), but here are some off the top of my head.

Anything by Ulrich Schnauss, especially the album by Ulrich Schnauss & Jonas Munk (which was free!)
The new Sasha album 'Scene: Delete' is very chilled and interesting.
Brian Eno has done lots of this stuff - music for airports, apollo: atmospheres & soundtracks, music for films, discreet music..
The score from the movie 'Moon' by Clint Mansell is awesome, as is a lot of soundtrack stuff by thomas newman (american beauty, skyfall and a hundred other movies)
The KLF - 'chill out'
Port Blue (which is the ambient side project by the guy behind Owl City) - I can send you this stuff as it was a free download & never sold. He also did a recent album under the name 'colour therapy' which is great.

Moby has at the moment a free 4 hr album for download on his website called 'Long Ambients 1: Calm. Sleep' which you may want to grab.

That reminds me - the Bsack to Mine series of mix albums is also a great source of inspiration if you're track hunting.
That's the Groove Armada one with the mix into Barry White tune and also the track by Dayton.
That album is 16 years old, blimey! Happy days of partying late, walking home messed up and taking a few days to recover!
Ray Mang - 'Number One' is the standout track on that comp.

Has anyone mentioned any of Eno's ambient albums?

Aphex twins ambient stuff is quite good.
