In no particular order:

Frank Zappa - mind melting technical genius
Roddy Frame - my dad got me started playing lounge jazz (albeit badly) when I was 9. Roddy Frame's music showed me how to use the chords and how to structure songs!
Django Reinhardt - better with 2 fingers than I'll ever be with 5 (ooer missus)
Tom Morello - for me, took rythmn guitar to a whole new level and his lead licks are handy too
John Frusciante - the guitarist who I sounded most like when I played in a band of my own - the only difference is he's successful!

He's got a massive back catalogue but I reckon it's best to start with his more accessible stuff like 'Joes Garage', 'The Best Band You Never Heard In Your Life' or 'Broadway The Hardway'.

Alternatively there's Hot Rats which is basically 45 minutes of guitar solo recorded, according to Zappa folklore, for Executive irritation biggrin
