I've just come across this thread because like the OP I find myself listening to this kind of thing, not sure why, just felt like it.

^^ Isn't this a strange thing. My parents didn't listen to country, but whatever they did listen to is totally imprinted into my mind as being good/enjoyable/rose tinted. I was not rebellious though so...I know you've given your opinion, but hell, I just need to tell you that you can't go wrong with Cash. Cash, of course, was heavily influenced by Hank Williams whose simple, rough-n-ready sound is beyond comparison to anything else. Contemporaries of Hank are also well worth checking out, in particular Roy Acuff and his recording of Wabash Cannonball.
While typically associated with rock 'n' roll, Elvis, Roy Orbison, Jerry Lee Lewis, Carl Perkins and the Everly Brothers have also produced some fantastic country tracks. I'd recommend Rock 'n' Roll Time, Jerry Lee Lewis's most recent album which has a great honky-tonk kinda feel, and the Everlys' Take a Message to Mary is beautiful. Let the Jukebox Keep on Playing and Movie Magg are two of my favourites by Perkins.
I don't know too much about general country from after the '50s, but I'm exploring the '70s 'outlaw' genre and find myself enjoying the 'Highwaymen' quartet of Cash, Nelson, Jennings and Kristofferson. Me and Bobby McGee and Sunday Mornin' Comin' Down are two great Kristofferson-penned songs. Merle Haggard's also a good one from the '70s and so is the vastly underrated Townes Van Zandt.
George Jones (The Race is On) and Roger Miller (King of the Road) are two more artists/songs worth checking out.
