During the winter I will be adding stalks for indicators, lights, wipers and washers. I am also considering changing the dials. I do like the look of the dials but find the the speedo particularly as useful as an ashtray on a motorbike especially in speed camera areas. Just wondering if I was to change them which system is best bearing in mind that I am a novice when it comes to wiring. I believe that the Stack system from the factory can be wired into the loom without much difficulty but is this the best or is the Race Tech Dash 2 a better option?

Any of these digital type dash modules will do the job and I doubt any will be more or less difficult to wire.
It mainly comes down to your choice of specification and the style you prefer.

I fitted SPA rev counter and speedo, both work fine and speedo is very adjustable to wheel/tire circumference.
The plus side is you don't need to move the position of the gauges, the minus is of course the gauges are not in direct eye line when driving.
I have a Stack sitting in the garage but prefer analogue read-outs.

Nowadays everywhere is a potential speed cam area and traditional dial or electronic bar displays are not accurate enough when the range is 0 - 200mph. For myself, only a numerical display can do it. So to retain the look of the dial dash I just added an SPA digital speedo. Main part of the job was making / mounting a bracket for the sender.

Both stack and SPA use stepper motors in their analogue displays, so plenty accurate enough.
The Spa analogue needle is lit and can be made to change colour at any critical speed, e.g. orange at 30+ mph red at 70+mph.

Thanks Guys. I have decided on a Dash 2 Pro. Does anyone know where I can get a Pod for the Dash 2 Pro to mount behind the steering wheel?

You'll have to knock something up yourself..... mine is a modified Corsa cover, get down your local scrapers ;-)

Steve Smith does binnacles in carbon fibre, I believe.
