Has anyone managed to get a gtr onto European plates... if so where and what were the problems?

Looked into this a few months ago. It's possible in Germany as they have the equivalent of IVA but, in countries such as France, Belgium and Denmark it is complicated and expensive although I'm not sure about Spain.
Ultima GTRs have no European Community Whole Vehicle Type Approval (ECWVTA)or European Community Small Series Type Approval (EC SSTA)and that means no European Certificate of Conformity (COC) is available. Without a COC, registration is a struggle in most EU states.

There's one for sale in France - not clear if it is on French plates but certainly should be at the price!!

You have to go the individual vehicle approval route. Possible but time consuming

Nothing impossible but certainly expensive. I don't even think to register mine in France.
Pollution and sound of the engine are far away of what permitted...

There was an announcement back on 30th Sept on Ultima Factory's Facebook page where they shared a post about PCA Motors launching the distribution of the Ultima in France. Due to forum rules they may be limited on what promotional info they can announce here. As always if your really interested, give them a call.
