Hi FC No she is customer built just had a brain wave is a COC the MOT ?
The coc is a European type approval, the problem is we have IVA and this is country of origin only.
I believe Spain have a bee in their bonnet about original certification only so as per the original answer I think you are in bother as obviously you won't be able to supply one that is accepted in Europe (I think).
Happy to be wrong though, let us know hoe you get on.

Coc cert are supplied only with new high production cars in Europe CE for first time registration. if the car is already registered in UK , to register it in another EU state one only has to register the car in destination EU state and change plates , it must have been road registered over 6 months or done 6k KM not to apply vat at the registration stage in the new EU state.

Well different laws in Eu states may upply..

After Brexit from what I see registering a car in EU imported from UK would have to go SVTA ,single vehicle type approval.... but still unclear.

Here in Switzerland and not being part of the EU, registering an Ultima is a hassle, but it's not impossible, meaning you need to go down the SVTA route.

This gets better....lol

The bike is currently registered in Germany, with a soon to be expired TUV. I want to buy the bike and bring it to Italian system, so need the CoC to do so.....does it still need TUV Approval, or surely the Italian Inspection will work? No?

Get your reading glasses on and learn all (most of it at least) here: https://en.wikipedia.org/wiki/Type_approval with references to the EC Single Internal Market and Type Approval Directive (EC-92).
From what I have understood, if a vehicle has been road registered in a EC country, changing registration in another country should not be too much of a problem, apart from local rules and regulations which may apply
