My speedo seems to be all over the place (which I think may have won me yet another speeding ticket yesterday - so there may be another Ult for sale soon as currently 9 points!) but I understand this has to do with the sender gap distance on the drive shaft. Before phoning Stack, can anyone confirm the exact gap/distance/tolerance required?

The gap should be between 1 and 2mm, ideally nearer to 1mm. If the gap gets too big, the speedo reading becomes erratic or it stops working altogether.
