Wiring up multiple TV Screens in a bar - how to?

Thinking about this.

Does it have to be HDMI?

If your courses have the capability to output HD in analogue COMPONENT format then that would be alot cheaper to do. Still use CAT5/6 cable for the runs, but the electronics would be alot cheaper.
