She may have already had some savings and been talked into the loan by a good salesman who told her her to use that cash on a holiday or something.

People do it all the time. I know a lot of people (this was over 10 years ago, but principle is the same) who were talked into getting finance at Dixons when they could afford to pay for things outright. It was just how it was posititioned by the sales guy.

Also if as a couple they earn 40k net, that's what? Around 3333 per month, so in theory with a small mortgage (can't remember theirs) and if they pooled their money, they could have saved it. It would have been tight but judging by some of the posts on PH some people seem to live on packed lunches and fresh air. I reckon those boring doctors from last week could have saved 1666 a month!
