I was disappointed at the lack of instantly dislikeable candidates - no silly hats, tattoos, daft hair-dos. Ah well, perhaps tonight.

This is supposed to be for good professionals. If they haven't heard of Iles Flottantes then I don't think they should be there. It's not difficult to make a reasonable attempt at is, but it does need them to be able to keep their nerves under control whilst rustling up a vanilla custard and boiled meringues. Through some sugar in a pan for the caramel and keep an eye on it. Don't stir it, anyone with half an ounce of cooking sense knows that stirring caramel as it cooks just results in it crystallizing on the spoon and you end up with a solid mess.

Would I have made a horrible mess of it? Of course, but I'm a mathematician that earns a living from obscure bits of electronics. I suspect I'd have made less of a mess of it than some did.

Seriously if these guys don't know what a / or how to make a Hollandaise sauce then they are way, way out of their depth.

That is one of the most basic things a chef is taught.

Never been a fan of brandy snaps. I don't think I like the two different skills test format. It should be an even playing field. IMHO.

These programs make me feel like I'm a bad person a times.

When someone comes on all cock-sure of themselves in almost, almost willing them to fk up.

Maybe I'm jealous as I've never been in a position where I could be that confident. grumpy
