It was only this evenings programme that I watched from the start with each chefs intros. Not one is a head chef, all sous or junior sous. Now that may be equivalent to your local pubs head chef but I was surprised at their years in the trade without progression. May be through choice but in modern gastro exceptional people reach high status quickly if they seek it out. Granted, traditional routes may be a more solid career foundation but if I was <25 I would be aiming for £ and recognition with a book deal!

Liam. Great execution, range and experience may come to play but you don't get to work in a 2* place unless you're pretty good. Watching closely.
