It was only this evenings programme that I watched from the start with each chefs intros. Not one is a head chef, all sous or junior sous. Now that may be equivalent to your local pubs head chef but I was surprised at their years in the trade without progression. May be through choice but in modern gastro exceptional people reach high status quickly if they seek it out.
