You'd be amazed at the amount of very average chefs that think they are god's gift to cooking. I guess that's why they participate in the program and the tv producers don't turn them away because it makes 'good' tv. Some of the skills tests made excruciating viewing - the Marie Rose Sauce made only with ketchup and olive oil, especially so. Perhaps the show is aiming to be a bit more X-Factor. Entertaining in these early stages mind you.
We also had [hot] risotto on raw scallops, and the young chap in his pre-show interview saying something like "I like to do experiment and do things differently." followed by "I cook meat, veg and potatoes." That isn't experimental. Or different.
The guys that got through last night probably think that the standard of their group is indicative of the the other groups... there were a couple of good chefs last week, so I think they will be surprised!
I imagine some over-estimate their ability through lack of experience - they haven't worked with many talented/knowledgeable chefs and/or received any formal training on fundamental techniques.
I would have thought though that contestants would have watched previous editions of the show, or read a book on techniques (and practised).
I had a chuckle when Marcus said something along the lines of "It's good but you wouldn't remember it the next day"; I ate at Marcus @ the Berkely and I couldn't remember any of the multitude of courses the next day (might have been the wine )
