Why do these professional chefs not know you don't put raw garlic (or shallots for that matter) in a dish???

As soon as I saw Marks lamb I thought why isn't it seared? Sous vide is all very well and good but a nice sear gives meat flavour.

How do I know this as nothing more than a home cook but he doesn't?
