They would have taken moulds of his teeth and matched these with the bite marks.

They WILL have compared them, they MIGHT have matched them.When someone's found guilty then by all means use whatever medieval methods you see fit, but make sure you have the right sicko first and don't prejudice a trial such that a guilty party might get away with it due to abuse of process.
