Google yields conflicting points of view.

Can they be frozen without overly impairing taste/appearance?

If they can, is it best to freeze them raw or cooked (I would do them Roman style, stuffed with mozzarella and anchovies, battered and fried)?

Flowers are much more delicate than other parts of the plant and from an aesthetic point they will be ruined

Interesting idea. They will freeze blanched and stuffed a million times better than raw.

However, I suspect they will still come out like mush whatever you do. So expect stalks with lumps of stuffing and gloop.

Unless you can freeze at a million degrees below zero ice crystals will form puncturing cell walls which will turn to liquid when defrosted.

If they could be frozen this way there would probably be a good market for them.
