I'm building a downstairs shower room which has a concrete floor.

I'm using a stone resin tray and would really like it low to the floor rather than using a riser kit.

I can cut out the floor / wall for the trap but this would mean there is no access to the trap without removing the tray - which will be impossible once the floor / walls are tiled.

I've never had to remove a trap and they are now accessible from the top so is this an issue ?

No need to access. Just buy a good one and make sure the plumber does a good job of fitting it

I presume the wall you mention is the water leaving the building? If so you have some level of access from there. If it leaks, where's the water going to end up?

Out of the wall would be my guess. What about lining your channel with a length of guttering that protrudes out of the wall a fraction, just as a back up to ensure any leak wouldn't really cause a problem.

No - the wall was external but is now internal and is about to have a concrete floor poured over the drainage pipe.
