Just seen this topic. The kitchen layout is similar to what I am looking for, especially the pantry, although I think our dimensions are one cupboard smaller in each direction so instead of a island we will have to have a breakfast bar. I think.
And whilst not changing the floor area, we are intending to change the roof from a flat roof extension to a sloping roof with roof lights to give the illusion of space.
Yours looks lovely, what are the worktops?

The pantry door would look wrong if they went to the floor, as the bottom line would not match the rest of the kitchen.Using a panel would be best, as that could be attached to the rear of the door, so still giving a step back to the plinth, although not as deep as the rest of the kitchen.
Plinth would need to be attached below the door, and would be flush.
The should be 2-4 mm of adjustment with the hinges, this is usually enough. If the gap is still too big, then the hinge plate could be packed out to give further adjustment. (not ideal).
The standard method of joining doors is to use jointing plates, see below.
