Mortgage with new job

I'm in the process of selling my current house - survey has just been done, no problems, so should be completed in the next few weeks.
Out of the blue I got a call earlier this week about a new job, decent salary increase and much better career wise.
Will I be able to get a mortgage immediately after starting a new job, or will I have to wait - and if so, how long?

I'm self employed, last year I asked around and they will only take income I've paid income tax on into account. I made a large amount in the last few years, completely legally, tax free and they simply refuse to take it into account.
It would be worth getting a job for a few months to get a mortgage.

My previous Mortgage Co who said they'd port my mortgage and that I was pre approved

All said the same thing.
I already own the house and would like a 50% LTV, even 25% would be acceptable.
