Composting - Advice needed

Every few weeks I have added about 10 litres of beer dregs/Cola/Ammonia mix to my heap. Sitting in a purpose built 5mx5m walled area.
Every week adding all the garden weeds/2 acres worth of grass clippings/chicken shed straw/kitchen scraps.
Turned every 6 weeks with the Kubota loader.
Never seems to grow over the top and is a lovely rich soil at the bottom.
