I've just realised I've an opened packet of climbing beans from last yr. Will they germinate okay or should I buy some fresh?

They should have a use by date on them. Realistically if they are well past that then the germination rate won't be great but you never know.
Sow them all and see! If you need more certainty buy some more.

Some plant seeds will only stay viable for a very short times, but beans and peas will be really good for 2/3 years at the very least, as they get older allow for more redundancy.
