Flooring options

Hi All,
We have building work starting in a few weeks, however I'm still to confirm flooring options.
We have a hallway, dining room and kitchen, which will all join together in a U shape. The kitchen and dining room is open plan with a wall being removed. The hall way to dining room has a door way (door being removed).
Hall way - existing solid oak floor boards
Dining room - existing solid pine floor boards
Kitchen - existing concrete
Current plan is for the existing wood flooring to be sanded and the pine to be stained to match the oak in colour. The kitchen is planned to have (at present) Amtico with a floor board design to match the pine in the lounge.
Questions
1) should the Amtico be fitted touching all the walls and kitchen + appliances fitted ontop? We are fitting an Aga Masterchef 110 Induction, wondering if this needs to sit on concrete due to weight.
2) is polished concrete/tiles a better option for the kitchen given the weight of appliances and kitchen cabinets?
3) any other thoughts on the best approach?
