You need to use a wire to attach the trap to something solid, if the rat is partially trapped you can find it and deal with it rather than let it suffer.

Did the chickens have access to the dead rat? They'll certainly eat mice.

This is why Fenn traps come with a chain attached, I stick a caribiner clip on the end and clip it inside the box.

I’ve caught rats before with their guts all removed, a rat with think nothing of eating a dead mate, it’s just survival for them.
