I occasionally get deer in my garden(there is one there right now, having sat there chewing the cud (or whatever it is they chew) for the last hour or so), but I would like to see more of them.

Is there any way to attract them: food pellets, the right plants, stuffed models of sexy lady deer, etc?

grow sweetcorn. Allegedly irresistible to deer. I can vouch for it too - every time Mrs Mono grows sweetcorn on her veg patch the deer time it perfectly for when its just ripe and ready to be picked to smash down the fence and nick it. They ignore everything else but sweetcorn gives them the red mist....

And thanks for the suggestions: not sure how long a salt block will last in rainy Scotland, and they will have to fight the baby for any sweet corn biggrin

FYI, that is a Roe deer.
The Mineral salt block will last a huge amount of time. They rely mainly on abrasion from the tongue to 'disappear'.
If you are worried, concrete a fence post into the edge of your lawn, attach the block and put a cover over the top of it. A bit like the lid of a bird box...if that makes sense.

They taste lovely.

Give him a little summer to fatten up then in the freezer with him. Get a salt lick out and start working on attracting the next one.
