I could quite happily spend 10 day/nights in NYC not sure if I would by choice. It's horses for courses really but the main thing that would put me off for that duration would be the cost. A reasonable standard of accommodation is expensive. You can save a little by staying in one of the other boroughs but if you want to see the main touristy things even though the subway is good you'll spend allot of time travelling.
Figure on around 1k ish for flights and around 150 a night for accom and you're at over half your budget already.
I've been at that time of year several times and it's ranged from feet of snow, pretty cold, to pleasant.
In summary I'd look at spending 4/5 night in NYC remember the time difference it's enough to mess you up for at least the first day but affects people differently. I'd use the rest of the time to drive around OR fly to San Francisco which is a totally different vibe to NYC or Vegas if that's your thing?

May i suggest taking the Acela to DC for a couple of days, its less than 3 hours each way and well worth a visit

Virgin flights out of Heathrow are class, out of Gatwick they're a bit more hit and miss as they're tourist not business routes in the eyes of senior management. You'll not go wrong though, although if you're coming from the South (which I believe you are) then BA does have the advantage of T5 which is a great experience and VERY easy access from the M25 as you don't have to encounter the fun and games of getting to T3 where Virgin operate from - M4 and the tunnel...not fun. I guess I'm just saying that if BA are similar price you'll have an easier journey at this end and I can't tell the difference between their economy product and Virgin's if I'm honest.

If you do really want to rent a car, take the PATH to Jersey City. It's about ten minutes from downtown Manhattan, but because it's New Jersey, rates are much cheaper and the insurance is included at no extra price.

Another thing i'd recommend you do is the Circle line cruise round Manhatten, try and time it so the sun is setting whilst onboard, highlight of our trip (that and getting engaged)

+1 for Virgin Atlantic Premium Economy. Apart from the bigger and better seats and quiet cabin you'll be among the first off the plane which could save you a looong wait in the queue for immigration. Car hire advice is sound - just don't. Utterly pointless in Manhattan. Especially in December. Just take a day or two worth of clothes. Then stock up at Macys.
ETA: BA's version of Premium Economy (World Traveller Plus) is rubbish. Same food and service as Economy. Just two abreast instead of three abreast.

There used to be a guy called Fat Dave who you could hire and he'd take you on a foody tour of NewYork. I say 'used to be' because I had a look at his website and it's not been updated for a while. Have a look here http://www.viator.com/New-York-City/d687-ttd if you sign up there are some really good deals, especially on classic car site seeing tours. We bought the New York City Pass, well worth it for us, especially as some times it allowed queue jumping. Staying in mid town was good for us as it meant we could walk to most of the main attractions we wanted to see, not sure if it is doable in the winter, but the NYC pass gave us free bicycle hire, which we used to cycle around central park, the pass also gave us use of the water taxi, which took us down to the statue of liberty and the 9/11 memorial.

I flew Delta / Air France to JFK. No problem.
As someone said add USS Intrepid to your list, at the moment they have a space shuttle there, not sure for how long though.
I believe you can get a tour of the fed reserve bank if that takes your fancy.
