I would strongly recommend this place http://www.turtlenestinn.com/ in Grand Cayman. Set in Bodden Town at the East end of the Island, it's a world apart from the glitz and bling of Seven Mile Beach, but is absolutely perfect because of it. The pool backs right onto the beach and there is superb snorkelling right on the reef there. There are plenty of water sports options throughout the island and with it being so small, nowhere is more than a 15 minute drive away.
